Sticks ‘n’ Sushi is a Danish restaurant and takeaway chain which specialises in sushi and yakitori sticks.

It has five restaurants across the UK.

The restaurants’ reputation was built on serving high-quality, fresh food based on a unique combination of traditional sushi and yakitori sticks from the grill, meaning that those less keen on raw fish can choose from a selection of chicken, pork, beef and vegetable skewers – all grilled fresh to order.

Attracting both families and trendsetters, Sticks ‘n’ Sushi is known for making fashionable food friendly and affordable.

Our Work

PCPM fitted the chiller and freezer equipment and built the walk-in coldrooms at the Sticks ‘n’ Sushi outlets in Oxford, Cambridge and Victoria.

It also designed, specified and installed the refrigeration equipment used to chill the sushi cases used by chefs in the restaurants’ open kitchens.

The Outcome

Because of the unique – and visual – nature of the client’s kitchens, this equipment was installed on a centre island.

And because of the nature of the Sticks ‘n’ Sushi menu, temperature control is absolutely critical to keeping the raw ingredients fresh and safe to consume.

The kitchens were custom-designed by the client and had to be configured, installed and tested prior to the floors being put in and the rest of the build completed.

It was absolutely critical that the solutions we provided were not only effective, but worked properly and could deliver the level of temperature control required by Sticks ‘n’ Sushi, because once it is installed and the rest of the kitchen is built around it, it’s extremely difficult to unpick and start again."
